Jayson Kanekoa

Chef Jayson Kanekoa, Executive Chef at Waikoloa Marriott, is a Hawai‘i Island native with 39+ years in the kitchen. Known for his bold, local-forward flavors, he co-founded Pā‘ina by Ocean with his son and champions farm-to-table cooking rooted in culture.

Ocean Kanekoa is a rising star on Hawai‘i Island, blending local tradition with fine dining technique. Founder of Pā‘ina by Ocean, he brings deep aloha for land and sea to every dish — shaped by his roots in Waimea and training at the Culinary Institute of America.

Roger Dikon


Roger Dikon is a pioneering force in Hawai‘i Regional Cuisine, shaping the islands’ dining scene since 1978. A founding member of the movement’s original 12, he’s opened and led celebrated kitchens from the Mauna Kea Beach Hotel to Kapalua Bay Hotel and Maui Prince Hotel — blending global experience with a lasting love for Hawai‘i’s flavors.

Kathy Morris

Kathy Morris infuses every dish with aloha, guided by her belief that “more love, the better.” A graduate of the Culinary Institute of America who began her career at the Mauna Kea Hotel, she went on to lead fine dining kitchens along the Kohala Coast before bringing her creative touch to luxury homes across Hawai‘i Island — where fresh, local ingredients remain at the heart of her cooking.
